Welcome to my food design column. Here you will find mostly old east Texas recipes with southern ingredients that I grew up with and now grow in the NTCC Farmers Market Garden! I am not a chef but a food engineer - I love to design and re-design food from the ground up!

Mr. Chad Henry is the Agriculture Instructor at Northeast Texas Community College. He is married to Melody Henry, the Associate Dean of Out-Reach Services at NTCC, and they have three children, Jace, Keely, and Kincade. Mr. Henry was born and raised in Lake Charles, Louisiana. He grew up working on his family’s ranch in Southwest Louisiana. In the past, they raised registered Beefmaster cattle, commercial cattle, rice, soybeans, milo, and horses. Today the ranch is primarily a commercial cow/calf operation. Mr.

McCracken, Rene

Mrs. Rene’ McCracken is the Director of Agriculture at Northeast Texas Community College. She is married to Tim McCracken formerly of Kilgore, TX and they have three girls, Samantha, Claire, and Audrey. She began in her new position here in July 2012 with a move from Henderson, TX to Mt. Pleasant (Harts Bluff Area). Her family and her have a 40 acre stocker ranch that they plan to transition into a more sustainable farm including, gardens, poultry, orchard, cow-calf, custom fed steers, meat goats, and a fully stocked fish pond – “just for fun”. Elizabeth Hoggatt Whatley Agriculture Complex

The Elizabeth Hoggatt Whatley Agriculture Complex, designed to complement the sustainable agriculture program at NTCC, is intended to serve as a teaching tool for students and the local community as to the benefits of sustainable technologies, as well as to help encourage rural, small-farm based economic development in northeast Texas.  The building is LEED® certified platinum, a standard established by the US Green Building Council.

Scholarship Options

A unique aspect of Northeast Texas Community College are the many scholarship opportunities that exist. The vast majority of these scholarships are administered through the NTCC Foundation, a not-for-profit corporation established in 1984 whose major focus is scholarships. Scholarships available through the NTCC Foundation specific to agriculture are listed below, but there are many other opportunities available at NTCC -- many of which are not tied to a specific area of study.

NTCC Ag Club

Purpose:

The NTCC Ag Club was formed in Fall 2008, at which time members ratified their new constitution and elected officers. The purposes for which the Club was established are as follows:

Do-It-Yourself Agriculture

Additional materials will be added to our DIY Agriculture library as time allows.  In addition to a compiled set of on-line references, we plan to add short videos showing the viewer how to do certain technical things, fact sheets and handouts in PDF format, etc.
